Medium Sage Brined JD Farms Turkey

Step 1 - Place your bird in a baking pan/Roasting dish Breast side up and your wings tucked under the bird. Do this either on a grate or bed of mirepoix ( Carrots/Onions/Celery). At this stage you can also stuff your bird with onions/citrus/herbs if you wish. Also pat your turkey dry with a paper towel at this point, it will ensure the crispiest skin. 

Step 2 - Preheat your oven to 325 Degrees

Step 3 - Melt some butter and brush the entire outside of the turkey with butter. Go generous here as butter makes things better!!

Step 4 - Place your bird in the preheated oven. 

Step 5 - The General rule is 20minutes per lb, but preferably use a thermometer to test the bird after 3 hours.

Step 6- After 3 Hours check the temperature under the leg. This is the deepest part of the turkey and will reach temp the last. You want this to read 160-165 before pulling the bird. a small turkey should take 2.5 hours on average, medium 3 hours and large 3,5 hours

Step 7 - Once you pull your turkey from the oven, restrain from carving for at least a half hour. This will let it relax and ensure your turkey stays moist. Enjoy.

Giblet Gravy

Instructions: Heat gravy in a saucepan slowly while stirring and serve on the side.

Roasted Mushroom & Caramelized Onion Stuffing

Instructions: Warm in a 375 F oven for 25-30 minutes.

Brussel Sprouts with Pomegranate & Apples

Instructions: Heat in a 375 F oven uncovered for 25-30 minutes until warm throughout.

Carrots & Parsnips Glazed with Rosemary Butter & Chestnuts

Instructions: Heat in a 375 F covered oven for 25-30 minutes until warm throughout.

Black Pepper & Sherry Candied Sweet Potato with Whipped Maple Cream & Toasted Walnuts

Instructions: Heat sweet potatoes in a 375 F oven uncovered for 25-30 minutes until warm throughout. Garnish with whipped cream and walnuts.

Baby Winter Greens with Honey Thyme Dressing

Instructions: Add all ingredients to a mixing bowl and toss with dressing. Do this last minute so green keep their life

Sourdough Focaccia 

Instructions: Warm in 375 F oven for 15 minutes. Cut before serving.
