HERES WHATS INCLUDED IN YOUR KIT!:

  • 12 oz slow braised birria beef
    20oz consomme
    8 tortillas
    1 ball oaxaca cheese
    1 ramekin spiced beef fat
    1 ramekin house made hot sauce

WHAT ELSE DO YOU NEED?

  • If you want to re-create the authentic experience, chop 1⁄2 white onion, rinse with cold water & drain. Chop 1 bunch of fresh cilantro.
  • If you like your tacos really crispy, a bit of vegetable oil is helpful.
  • If you like them really cheesy, you can add monterey jack or mozzarella to your oaxaca.
  • 1 SPATULA OR FLIPPER
  • 1 GRIDDLE OR LARGE HEAVY BOTTOMED PAN
  • A POT OR CONTAINER TO HEAT CONSOMME
  • TONGS AND UTENSILS TO FLIP TACOS

HERES WHAT TO DO!

  • PLACE YOUR KIT IN THE REFRIGERATOR TO THAW FOR 24 HOURS.
  • PUT ON THE TOP ROPE BIRRIA PLAYLIST ON SPOTIFY, OR SOME GREAT CLASSIC WRESTLING ON THE TV. NOW YOU CAN START. A COLD BEER ALSO HELPS THIS PROCESS [TRUST THE PROCESS]
  • CHOP CILANTRO AND ONION, RINSE ONION. SET ASIDE.
  • SHRED THE BALL OF OAXACA CHEESE. MIX WITH EXTRA JACK OR MOZZA IF YOU DESIRE SUPER CHEESY OR CHEESE SKIRTED TACOS
  • HEAT CONSOMME IN A POT, OR IN A MICROWAVE SAFE DISH
  • HEAT UP A LARGE SKILLET [CAST IRON IS GREAT, BUT ANY HEAVY BOTTOMED PAN WORKS. EVEN BETTER IF YOU HAVE A GRIDDLE OR FLAT TOP]
  • MELT HALF OF THE BEEF FAT, AND ADD A TABLESPOON OF VEGETABLE OIL OVER MEDIUM HEAT. DIP AND FLIP HALF OF THE TORTILLAS AND ARRANGE IN THE PAN [OR, IF YOUR PAN IS SMALLER, DO 2 AT A TIME WITH LESS FAT]
  • ADD SHREDDED OAXACA CHEESE TO TORTILLAS, AND TOP WITH DESIRED AMOUNT OF BEEF. ALLOW TORTILLAS TO CRISP OVER MEDIUM HEAT IN THE FAT. MOVING THEM AROUND AS NECESSARY. ALLOW THE CHEESE TO MELT INTO THE BEEF.
  • TOP TACOS WITH ONIONS, CILANTRO, AND A TABLESPOON OF CONSOMME. FOLD TACOS OVER AND CONTINUE TO COOK UNTIL DESIRED CRISPNESS IS REACHED, CHEESE IS GOOEY AND STARTING TO CARAMELIZE ALONG EDGES.
